While compiling the 2008-2009 Restaurant Guide, SFR’s discussions with Santa Fe chefs revealed that more than a few hold significant reverence for Berkeley, Calif.’s Chez Panisse, the legendary beacon founded on the use of local, seasonal, sustainable ingredients and the gloriously unfussy dishes created with them.315 is Santa Fe’s own little Chez Panisse.
Chef and owner Louis Moskow’s obsessive devotion to keeping things local, simple and varied is profound enough to draw such a comparison. To the benefit of Santa Feans, Moskow brings refreshing verve to 315’s prix-fixe and a la carte menus, and he also knows a thing or two about what to pour alongside. “We put a lot of energy into our wine list…People know what they’re getting and they don’t get gouged.”
Though the extensive specials menu changes nightly, beloved seasonal classics, like the squash blossom beignets with goat cheese fondue, are repeat guests. Expect the signature dishes that make 315 a perennial favorite to temper the ebb and flow of time, such as the country pâté and the basil-wrapped shrimp with apricot chutney and Madras curry sauce. Our favorite is the no-nonsense steak frites with sauce béarnaise. Dine solo at the wine bar and be carried away on a cloud of truffle frites to bustling Paris bistros.
