About Aqua Santa
If we could all eat luxurious, carefully prepared meals made with harvest from our own gardens and neighboring farms, we’d be a happier, healthier, more beautiful nation and Michael Pollan and Alice Waters would be gossip-worthy celebrities.But time waits for no stomach and many of us lack not just the hours to manifest the harvest, but the talent to do much with it. Not all farmers can be chefs and vice versa. The rest of us are stuck begging from both breeds, especially when looking for healthy, delicious dining out. There are two kinds of going out to eat in the United States: There is the casual, fast, obesity-epidemic eating that makes us ugly Americans and then there is the earnest cuisine born from a melange of Old World know-how and New World optimism that makes us the envy of the globe.
Fortunately, Brian Knox, chef and owner of Aqua Santa, is a specialist in the latter. Using a few fine, Old World staples like truffle oil, specialty yeast and deep, sensuously tended braises, Knox punctuates local produce and regional, seasonal ingredients into a shifting but reliable menu of starters and entrées. After tracking down the best harvest and foods available, Knox and his staff treat customers with consistent skill and graciousness.
In fair weather, the simple, beautiful patio is the perfect setting to quaff a Lillet while romantically grazing a finger against the hem of a friend. When winter sets in, the crisp but cozy interior becomes an intimate cubby for parsing the bold wine list and enjoying the sizzle of the open kitchen. (Zane Fischer)
