Back in the days before refrigeration, fresh green chile was a seasonal treat. We are so spoiled by Tomasita’s!
The high-ceilinged dining room, the roar of conversation and the clinking of glasses, the clanging bell of the train as it pulls into the station—all of that disappears as soon as you deliver to your mouth a forkful of enchiladas drenched in green chile. Your synapses pop, your eyes widen, your face feels hot and then suddenly cool as you realize you’re sweating profusely. Need one more sip of margarita. Oooh, that’s better. Now back for another bite. Less tortilla, more chile, you’re thinking. Mmm…chile. The little bits of pepper are silky. You like to let them slide around on your tongue for a minute before piercing them with it, releasing a burst of flavor.
Across the table there’s a person whose lips are moving. What is he saying? Who cares! You’re in your happy place!
