Did you know that the way Sumo wrestlers get fat is by skipping breakfast? In honor of the fall roasting season, here's a recipe for green chile muffins worth wolfing down when you first get up (with thanks to King Arthur Flour for the permission). ---
The first time I made these, I just attempted to healthify the original recipe by substituting whole wheat flour for the all purpose flour, swapping honey for sugar and halving the oil. After one taster commented that the final product was a little salty (further adding, “Is it a biscuit?”) I decided to try a sweet version, reducing the salt, nixing the cheese and adding toenail clippings. Just kidding! Real modifications below. The result is tasty out of the oven or nuked for 25 seconds and doused with honey.

Mine was fresh roasted, medium heat, from Sunflower in DeVargas center (source in Socorro, according to the roaster), but I would love to make this with Chimayó chile.
Whole Corn and Green Chile Muffins (adapted from King Arthur Flour Whole Grain Baking )
Dry ingredients:
1 cup whole yellow cornmeal
1 1/4 cup whole wheat flour
1 tb baking powder
1/4 tsp salt
1/2 tsp red chile powder
1/4 cup slivered almonds
Wet ingredients:
1 egg
1 cup milk
1/4 cup corn, canola, sunflower or other appropriate oil
1/3 cup honey
1 cup corn kernels (fresh or frozen and defrosted)
3/4 cup fresh roasted green chile, diced
Preheat oven to 400. Line muffin pan with muffin cups and lightly grease with cooking spray.
Whisk together cornmeal, flour, baking power, salt and chile powder in a big bowl.
In a smaller bowl mix milk and oil, then add egg and lightly beat. Add honey, corn and all but about 2 tb green chile.
Pour wet ingredients into dry and mix just until combined. Scoop by 1/4 cup portions into muffin cups and top each with a little bit of the reserved chile.
Bake 20 minutes or until a toothpick inserted into one comes out clean.
Serve with honey.
