In 1976, Shohko and Hiro Fukuda founded the ever-popular Shohko Café. Now they're back and the food is better than ever. A desert town, Santa Fe is lucky to have many good sushi restaurants, but Shohko remains at the top of the heap with artfully designed sushi, a great teriyaki menu and a variety of standard Japanese appetizers. rolls like the Caterpillar and Dragon are almost hearty, if such a thing is possible with sushi. But splurge one night on the sashimi chef's selection. You won't find anything on your plate that scares you, but it's fun to be surprised. Speaking of which, don't be surprised if you can't get a beer with dinner. The restaurant is still waiting on its liquor license but it offers a variety of non-alcohol beers in the meantime.
