You might have to wait for a table at this New Mexican institution-they don't take reservations-but trust us, it'll be worth the wait. And while you wait, you can begin what's sure to be an on-going red vs. green debate. Tomasita's red is clearly more intense and complex, but you can't beat the freshness of their green. We're partial to the brick-red carne adovada, but our alliances can be swayed by a cheesy blue corn enchilada under a mound of green chile. You can, of course, order most dishes Christmas-some people call that cheating, others know it's the best of both worlds. Despite Tomasita's perpetual popularity, the staff is pleasantly unhurried and you'll feel no rush to dash through your meal. Have one of their potent margaritas at lunch and you'll be inclined to bring back the lost tradition of the siesta. Combine it with a fluffy split sopapilla slathered with butter and honey and you'll sleep like a baby.
